Letters, calls and emails: Is it legal to vary terms of a contract unilaterally?

It struck me the other day that there has been no mention of the legal aspect of imposing contract changes unilaterally.

It strikes me that changes without the agreement of both parties may actually be illegal.

Any legal eagles out there care to comment?
